I finally perfected this. I used my no knead baguette as the base for this. I make the baguettes four at a time and freeze them individually. Then I let it defrost in the fridge and used it to make the garlic bread. Saves money doing it this way, but you can always buy a loaf from the store in a pinch.
Homemade Garlic Bread
1 French baguette (no knead made ahead or store bought)
half a stick of softened butter
2 cups Mozzarella cheese
Preheat oven to 400
Prepare a baking sheet lined with foil.
Cut baguette in half lengthwise and put each half on the baking sheet. Spread softened butter evenly on each half. Sprinkle as much garlic and parsley as you like on the baguette. Sprinkle the cheese on the bread, about a cup a side.
Bake for about 10 minutes, or until cheese is bubbly.
