As I was making dinner yesterday I noticed it was hot, really hot in the house. The AC I know can only do so much in the 105 heat but it was more than that. Turns out the freon is leaking again, froze the pipes, and the only thing happening was the fan was working in the system. Hopefully the landlord can get someone to fix it by Monday. We turned it off so it would melt, last night was miserable sleeping. Opening the windows didn’t help. I think we all only slept a couple of hours. AC is sort of working now, until it freezes up again. I am very thankful we never lost electricity. We do have fans going full blast.

Because of these developments I switched up today’s menu of baked scallops to slow cooker ribs. Much cooler cooking!

Monday: Spaghetti and meatsauce, garlic bread

Tuesday: Tilapia, rice, veggie

Wednesday: Leftovers

Thursday: Beer battered fish, homemade fries, veggie

Friday: Beef/Bean tacos, Mexican rice, Mexican corn cake, (not) refried beans

Saturday: Honey panko chicken fingers, pecorino fries, veggie

Sunday: BBQ drums, homemade fries, veggie
